Grandma’s pancakes – reinvented

My grandma always made pancakes. This is originally her recipe with a little twist of mine!

4 people

8-10 pancakes

3 eggs

5 dl whole milk

3 tablespoons of coconut flakes

1/2 apple, finely chopped

2,5 dl wheat flour

0,5 teaspoon of salt

1 teaspoon sugar

1 tablespoon of butter

1. Add half of the milk in a big bowl

2. Add all the flour, cocunut, apple. the eggs and the salt

3. Whip the mixture so it becomes an even batter

4. Add the rest of the milk and then add melted butter. (With melted butter in the batter you do not have to use butter in the pan while frying – even though it tastes good!!)

5.Melt some butter in the pan for frying of the first pancake, though.

6. Fry the pancakes and eat with for example rasberry jam and organic whipped cream
