ONE OF THE BEST: Malaysia/Spain fusion – mindblowing coconut orange saffron shrimp curry

This is by far one of the lovliest things I have made.

A taste orgasm. Your tastebuds will be struck by acidity from lemon, fruityness from orange and cocunut, a taste of the sea from the shrimps and fish sauce, crispyness from the okra – all together a mindlowing taste experience I actually got touch when I tasted.

you need

2 garlic cloves, finely chopped

5 cm ginger, chopped

1/2 medium hot chili

1 lb of shrimps

1 big yellow onion

3 slices of oranges

the juice of 1/2 orange

the juice of 1 lime

1/3 teaspoon of saffron

the meat from 1/3 coconut ( you can skip it if not avaliable)

1 can of coconut milk

1/3 cup water

1 tbsp hoi sin sauce

1 lemongrass, finely chopped

2 teaspoons of ground cumin

1/4 cup cilantro, finely chopped

1 lemon grass, cut into big pieces as seen on the picture below

1 cup okra, cut into pieces

sesame oil

sesame seeds

1. Heat up oil in a pan

2. Roast the cumin and the sesame seeds for three minutes

3. Add the onion, the saffron, coconut meat, lemongrass(chopped), cilantro, garlic, the ginger, and the organge slices

4. stir for five minutes until the onion has softened

5. Add the shrimps and cook on low heat for six minutes

6. Add the coconut milk and the sauces/seasoning (including lime juice and orange juice) and the lemongrass cut into pieces

7. Add the water and the okra

8. Let it cook on low heat for ten minutes

9. If not salty enough, add more fish sauce

10. Cut some fresh thai basil over it and Serve with rice
