On Saturdays after soccer, when I am more hungry than ever, I stand for hours and cook. It is slow food taken to the extreme.


Seared jumbo shrimp
Thyme/lemon-infused panko, sesame seeds, black garlic

Sauteed string beans
Malaysian prawn sambal/tamari/vine tomatoes

Melon salsa
Honeydew melon, valbreso feta cheese, spring onion, cilantro, lemon, spanish olive oil

Curried rice
Whole and ground cumin, muchi curry, sesame oil, ginger

Mojo sauce
Parsley, cilantro, red wine vinegar, jalapeno, cumin, spanish olive oil, garlic

Sweet and savory tomato
smoked sea salt, brown sugar, lime, tamari-roasted california almonds

Grilled bluefish
Smoked sea salt, tellichelli pepper, toasted sesame seeds, pepperonchino, juniper

Sauteed spinach
Garlic, olive oil, salt, pepper, lemon

Carrot puree
Rosemary, ginger, tamari, fish sauce, scallion, manuka honey

Oven-roasted Idaho potato
Garden-fresh thyme, rosemary, sea salt, olive oil, garlic, balsamic vinegar
